It was delicious and filling!
But, I think the recipe has to be more elaborate, like this: Spicy tofu spaghetti recipe (pictured above) is not the same as the classic spaghetti salad, which is a pasta salad with meatballs, mushrooms and tomatoes.
But it’s tasty and satisfying.
Here’s the basic recipe: 1 tablespoon olive oil (1 Tbsp.)
2 cups chicken stock 1 1/2 cups vegetable broth 1/4 cup fresh mushrooms 2 cloves garlic, minced 1 cup fresh spinach 1/3 cup chopped parsley 1/8 teaspoon dried oregano 1/16 teaspoon dried thyme 1/6 teaspoon dried basil 1/5 teaspoon dried rosemary 1/12 teaspoon salt 1/1 teaspoon black pepper 1/10 teaspoon freshly ground black pepper (optional) 1 tablespoon nutritional yeast (optional, but recommended) 1/20 cup fresh basil leaves 1/30 cup dried cranberries (or dried strawberries) 1.
Heat olive oil in a medium saucepan over medium heat.
Add broth, mushrooms, spinach, parsley, oreganol and thyme.
Stir well to combine.
Add garlic, mushrooms to the saucepan, along with 1 cup of the chicken stock.
Sautee mushrooms and spinach for 5 minutes.
Add pasta and mushrooms, stirring to combine, and stir to combine again.
Add cranberries and parsley to the broth mixture and stir.
Add basil leaves, parsly, oregonol and black pepper to the pasta mixture.
Add the spinach and season with salt and pepper.
Bring to a boil and cook for 2-3 minutes.
Add wine to taste.
Serve with fresh basil.
You can also use frozen or frozen pasta, but I prefer the fresh option because it adds more nutrition and flavor to the dish.
If you don’t have any basil leaves in your fridge, you can use dried cranberry stems or chopped parsly.
If using frozen, place it in a bowl, pour it over the spaghetti and top with fresh, dried cranbergrass.
