Cream Cheese Spinach Squash (aka Spinach Parmesan) 1 cup (240 mL) water 2 cups (2.5 cups) (2,250 mL) (or more) (140 mL) 2 tablespoons (30 mL) heavy cream 1 (2-inch) stick (30.5 mL) extra virgin olive oil, plus extra for brushing 1 (4-ounce) package (150 mL) fresh spinach 1 tablespoon (30mL) extra-virgin olive oil 1/2 teaspoon salt, or to taste, plus more for brushing 2 cups cooked spaghetti squash, washed, cut into bite-sized pieces (about 1 pound) 1/4 cup (80 mL) unsalted butter, melted 1/3 cup (20 mL) parmesan cheese, grated 1/8 teaspoon kosher salt, plus a pinch for sprinkling 1 (8-ounce or 2-quart) slow cooker or ovenproof skillet, high or medium-low 2 tablespoons olive oil Directions To prepare the spaghetti squash: In a medium saucepan, combine the water and salt and bring to a boil.
Reduce heat and simmer for about 20 minutes, or until the water is reduced to 1/6 cup.
Stir in the butter and parmesant cheese.
Cover and simmer until the cheese has melted and the squash is tender, about 30 minutes.
Drain the squash and set aside.
In a large bowl, whisk together the heavy cream, parmesans, and salt.
Add the spinach and stir to combine.
Taste and season with additional salt and pepper.
Spoon the squash mixture into the slow cooker and heat on high for 6 to 8 hours or on low for 4 to 5 hours.
To prepare your spinach: Heat the olive oil in a large skillet over medium heat.
Add onions and cook until softened, about 2 minutes.
Add garlic and cook for about 2 to 3 minutes, stirring occasionally.
Add spinach, mushrooms, and seasonings and cook, stirring frequently, for about 30 to 40 minutes.
Serve the spaghetti spaghetti squash with parmesas, fresh parsley, and chopped basil.
Recipe Notes *For this recipe, I used fresh spinach because it’s always a good idea to purchase fresh spinach from your local garden store.
If you’re using frozen spinach, be sure to save the skin for another use, as it can be hard to remove from the spinach.
